Pan Seared Wild California Halibut with Summer Flavors
Tuesday, August 31, 2010 from 6:00 PM to 8:00 PM (PDT)
Join me for an evening dedicated to some truly amazing fish. Brand Little, of Wild Little Fish Company will be the source of this amazing fish, some of the highest quality fish I have ever laid my eyes on! Atop that, it is super fresh, as he is also the fish monger!
For this class the guests will be treated to this ultra luxurious fish, paired with the freshest of summer ingredients from local farmers. The class will focus on the following techniques and ideas:
- Selecting fresh fish; where to buy and what to look for
- The differance in fish; fat content, flavor, texture and more
- How to cook various fish
- How to properly pan sear and roast Halibut, including butter basting with garlic and herbs
After the class, all the guests will be greeted in the dining room by a local winemaker who will be sharing tastings of their local wines to pair with the dinner. Here is the menu:
